When the carob pods darken at the end of summer, everyone gathers beneath the trees — guests, neighbours and the Nautical team, picking by hand the way it has always been done. The pods become syrup over open heat; what remains returns to the earth as compost.
The day ends the way days here tend to end: around one table, with carob at the heart of every course.
